 Don’t Over-Think Thanksgiving
Oh My Goodness – I remember my first Thanksgiving with my “In-Laws” 12 years ago. I had a meat Lasagna, Grilled Shrimp, a Roast Pork (pernil), a homemade corn-bread stuffing with sausage, rice and peas, mash potatoes, candied yams, citrus cranberry sauce, a huge salad of greens, biscuits with pesto, sauteed carrots with garlic, and of course a 30lb. turkey and gravy. Did I mention the appetizers? There was a fruit and 3 cheese platter, mini beef empanadas, thin slices of plantains with a garlic aioli, mushrooms stuffed with chorizo and blue cheese, artichoke and cheddar dip with chips, and my cheese straws (bread). Oh, and the beverages – the kids had a choice of three different flavored juice boxes, the adults had a choice of red or white Sangria, and there was water, ginger-ale, and my fresh lemonade. Not to mention, I made a fresh-peach cobbler with homemade ice-cream and coffee for dessert.8 Fool Proof Party Ideas!!
