My No-Bake Mocha Ice-Box Cake!

So the story goes…

in the late 1920s through the 1950s, no-bake cakes or Zebra cakes, traditionally made with Nabisco Chocolate Wafers and whipped cream, was a very popular dessert cake. The ice-box (refrigerator) was used to help the wafers absorb the moisture of the whipped cream to create a texture much like a traditionally baked cake.

It’s gaining popularity again (especially in warmer weather since an oven is not used) with NEW variations: chocolate, espresso, strawberry, banana, orange, peach, or lemon whipped creams combined with different cookies such as oatmeal, sugar cookies, chocolate chip, graham crackers, dutch cocoa wafers, and/or peanut butter cookies.

They are as easy as layering cookies and cream in a pan.
*(I use a spring-form pan for easy layering and for a neat presentation, but a sheet-pan was commonly used – making the cake more free-form.)
