Eating banana pudding feels like a HUGE Hug…or maybe that’s just how I feel when I eat it? It IS very rich, very decadent, and can be very fattening – that’s why I make it once in a blue moon. It’s a comfort-food treat that I make no more than once (or twice) a year. I tried “lighter” versions – some tasted great, others not so much, but nothing beats a true and tried classic recipe for banana pudding. You can substitute the “pudding” part with a fat-free or sugar-free instant vanilla pudding mix, but the flavor just isn’t there and the garbage that goes into those packets…well, you know what I’m getting at. Try this recipe, make the modifications that you’d like (that’s the whole point of following recipes, right? Add, take-away, substitute – make it your own.) Sometimes, I add walnuts, pecans, or almonds, even pistachios and make it a Once in A Blue Banana-Nut Pudding trifle.
